So you want to have pizza for dinner. If you know 2 hours
before dinner time this is the recipe for you. Make 1 recipe for 1 to 2
people.

If you're planning ahead start the dough 3 to 4 hrs before cooking.
Figure 1 recipe for 2 individual pizzas, 3 recipes for 8 pizzas.
It'll feed 4 adults and 2 kids with 2 pizzas left for breakfast.

Pizza Dough

Ingredients for 1 - 8" to 10" pizza

Combine
3/4 cups all-purpose flour OR bread flour or
1/2 cup white, 1/4 cup whole wheat
1 tsp instant yeast
1/4 teaspoon salt
1/4 tsp sugar
Optional 1/8-1/4 teaspoon garlic powder and/or dried basil leaves

Add
1 Tablespoon olive oil - omit for crunchier crust
1/3 cup warm water

Add additional flour or water as needed.
Stir with wooden spoon or hands until dough forms into a cohesive, elastic ball.
Dough will be slightly sticky but should be manageable with your hands.
Roll dough into a ball.
Drizzle bowl with olive oil.
Roll dough along the inside of the bowl until coated in olive oil.
Cover bowl with plastic wrap.
Place in a warm place (100 F) for 60 min or until doubled in size.

Place dough on a floured surface using floured hands and fold until smooth, about 3 times
Use hands or rolling pin to work the dough into 1 very thin 8" pizza

Cooking

Preheat grill to 425F+ (Start 15 min before grilling)

 

01 Dont Forget the Artichoke Hearts Grill one side 3-4 min until lightly browned.

02 Brush On the Olive OilTurn over and drizzle about 1/2 Tbl olive oil over pizza. Brush oil to evenly coat dough.

 

03 Now theTomato SauceBrush on tomato sauce. 04 and the MozarellaAdd the mozarella cheese.

 

05 Add the ToppingsAdd toppings and bake.



06 FinishedMove to cooler area of grill to prevent burning. Pizza is done when bottom is lightly browned and cheese is melted.

 

 

Cheese & tomato sauce will cook quickly.
Slow cooking ingredients should be cooked before adding to pizza.
Seafood should be sauteed and added just before serving.
Pre-cook sliced potatoes
Onions will still be slightly crunchy.

Toppings for 3 recipes of dough

Tomato sauce

1 can tomato paste
1 can cooked, diced tomatoes (Plum tomatoes are best)
Basil, fresh or dried
1/2 teaspoon sugar or more to taste
Red wine vinegar to taste
Garlic (or garlic powder) to taste
Heat slowly (on simmer) so it doesn't stick. Turn off before boil.

Topping quantities

1 can black olives (slice in 3)
1 lb mozzarella cheese
Feta
1 medium red onion (sliced rounds1
1 pkg TJ's pepperoni
1 tin TJ's anchovies
2 pkg TJ's Italian sausage, cooked
1 jar Costco artichoke hearts
1 lb TJ's sliced mushrooms
1 lb tomatoes sliced
Sliced sweet peppers
Fresh basil
Pepperoncini
Garlic, sliced
Olive oil

Serve with grated parmesan cheese & red pepper flakes.
